This you-are-the-best cake tastes delicious and is perfect for Mother’s Day!

Mother’s Day is fast approaching and you still need a cake for the holidays? Our cake you are the best is perfect for that!

Ingredients for 20 servings:

  • 150g softened butter
  • 150 grams of sugar
  • salt
  • 3 eggs (M)
  • 200 grams of flour
  • 2 teaspoons baking soda
  • 5 tablespoons of milk
  • 2 sheets of gelatin
  • 400 grams of whipped cream
  • 150 g fresh cream
  • 2 packets of vanilla sugar
  • 75 ml elderflower syrup
  • 200 grams of raspberries
  • 150 grams of blueberries
  • 100 grams of strawberries
  • 1 package of chocolate decor alphabet
  • 1 tsp chopped pistachios

Approximately per serving:

  • 230 calories
  • 15 grams of fat
  • 20 grams of carbohydrates
  • 3 grams of protein

Preparation time:

  • 45 minutes (plus 120 minutes cooling and 15 minutes cooking)

And here’s how it’s done:

  1. Mix the butter, sugar and a pinch of salt. Add the eggs one at a time. Preheat the oven to 160 degrees with air circulation.
  2. Mix the flour and the baking powder, incorporate into the butter cream with the milk.
  3. Place the dough on a small greased deep baking sheet (approx. 28 x 29 cm) and spread out evenly. Bake in preheated oven for 15 minutes. Leave to cool after cooking.
  4. For the cream, soak the gelatin in cold water. Whip cream, crème fraîche and vanilla sugar until stiff.
  5. Squeeze the gelatin, gently dissolve it, incorporate the syrup. Fold some of the cream into the gelatin, then stir into the rest of the cream.
  6. Spread the cake with the cream. Refrigerate for about 2 hours.
  7. Wash and sort the raspberries and blueberries. Wash, hull and finely chop the strawberries.
  8. Cover the edge of the cake with the fruit. Create a lettering with the chocolate letters.
  9. If necessary, make a flower of blueberries and raspberries and sprinkle pistachios on the cream. Refrigerate until ready to serve.
