You should try the vegan miso ramen with smoked tofu and edamame

Our vegan miso ramen can be supplemented with additional ingredients if desired.

We like to make this spoon soup on our own: the vegan miso ramen is wonderfully flavorful and can be changed to your liking.

Ingredients for 4 servings:

  • 100g edamame (frozen)
  • 1 smoked tofu
  • 2 green chillies (alternative: spring onions)
  • 3 cloves of garlic
  • coconut oil (for frying)
  • 120ml soy sauce
  • 400ml coconut milk
  • 800ml water
  • 2 teaspoons turmeric (grated)
  • 4 tablespoons peanut butter
  • 1 tbsp light miso paste (alternative: miso stock cubes)
  • 1 dash of agave nectar or maple syrup (optional)
  • 1 lemon (juice)
  • 400g ramen noodles
  • sesame (for garnish)

And here’s how it’s done:


  1. Thaw the edamame. Cut the tofu into cubes. Wash the chilli and cut it into rings, removing the seeds if necessary. Peel and chop the garlic.
  2. Heat the coconut oil in a pan or wok and brown the tofu. Add the garlic, roast briefly then add 1 tablespoon of soy sauce. Mix well.
  3. While the tofu is frying, bring the coconut milk, water, remaining soy sauce, turmeric, peanut butter, and miso paste to a boil in a saucepan. Squeeze a lemon and add the juice, simmer for 5 minutes and stir in a dash of agave syrup, if desired.
  4. Cook the pasta according to the instructions on the package. Drain and divide into 4 bowls, add the tofu and edamame and pour in the miso peanut broth from the pan. Sprinkle with chilli (or spring onions) and sesame and serve.


Ramen, including this vegan miso ramen, is much like our beloved stew: almost anything currently in the fridge or pantry can go in the bowl of soup. In principle, our recipe for soup sides is “only” for inspiration. Other ingredients that go well with our miso ramen soup include mushrooms, carrots, and bok choi. You can follow the ingredients and preparation of the broth in exactly the same way.


Don’t like it spicy? Then, sprinkle the finished miso ramen with chopped spring onions instead of chili. If the broth is still too thick for you, simply add more water.
