Fancy something light for lunch? Then don’t miss our veal cutlet with blueberry sauce.

Look forward to a fine lunch dish that is prepared in just minutes. The cream of cream cheese gives food a certain lightness and allows you to approach the second half of the day feeling full and carefree.

Ingredients for 4 servings:

  • 10g pine nuts
  • 50g cream cheese (5%)
  • 50 g lean cottage cheese
  • 6 basil leaves
  • 100 grams of blueberries
  • 150g veal cutlet
  • Salt pepper
  • 1 teaspoon oil
  • 1 slice of whole grain bread

Approximately per serving:

  • 440 calories
  • 19 grams of fat
  • 20 grams of carbohydrates
  • 47 grams of protein

And here’s how it’s done:


  1. Roast the pine nuts in a frying pan without fat and let cool. Mix the cream cheese with the light cottage cheese.
  2. Wash and finely chop the six basil leaves. Then wash and coarsely mash the blueberries. Stir both ingredients with the pine nuts into the cream cheese mixture.
  3. Rub the veal cutlet with salt and pepper. Fry on both sides in hot oil in the same pan. Toast the whole grain toast in the toaster.
  4. Arrange the finished schnitzel on a plate with the dip and wholegrain toast.
