Ultra moist coconut cake with chocolate shavings
Love the taste of coconut and want to use it in a cake in no time? Then our Coconut Shake Cake recipe with a hint of chocolate is made for you!
And here’s how it’s done:
- First put the dry ingredients, i.e. flour, baking powder, sugar and a pinch of salt, in an airtight bowl. Close them tightly and shake very vigorously.
- Melt the butter in a small saucepan or in the microwave – then add it to the dry ingredients along with the eggs and coconut milk. Shake well again.
- Now add the chocolate and coconut flakes to the batter and stir.
- Pour the batter into a greased Gugelhupf mold and smooth. Bake for 45 minutes in a stove heated to 160 degrees circulating air (180 degrees high/low heat). Perform a chopstick test – if successful, flip the cake. Sprinkle with icing sugar, let cool – and enjoy!
In our opinion, simply topped with powdered sugar, this Coconut Chocolate Chip Cake is a treat. But if you want to top it off, you can also cover the cake with milk chocolate frosting – and sprinkle coconut flakes on top. It looks great and of course it tastes heavenly too!
