First, preheat the oven to 200 degrees top/bottom (convection: 180 degrees, gas: level 3). Line the muffin tin with cases. Wash the peppers, deseed them and cut them into small cubes with the feta. Wash, shake, pick and chop the thyme. Add the flour, salt and baking powder.
In another bowl, whisk together the egg, milk, oil and paprika. Quickly add the flour mixture and half the feta to avoid lumps.
Fill muffin tins with batter and sprinkle with remaining feta. Bake in the preheated oven for about 20 minutes until the muffins are golden brown.
